Mercado Libertad also has many food stands and is a great place to sample local cuisine on a budget.

  • Birria: Birria is a goat-meat stew that is popular as a hangover cure. The meat is slow-cooked in a chili sauce, making it tender and full of flavor. Sometimes birria is used as a taco filling, but most often it stands alone. You will find restaurants called Birrierias throughout Guadalajara that specialize in this delicious dish.
  • Pozole Rojo: This hearty broth-based soup is one of the tastiest dishes in all of Mexico. It contains corn kernels and pork and is garnished with radishes, lettuce, cheese, avocado, onion, and fried tortilla strips. Some restaurants offer vegan or vegetarian versions of this soup, but typically it contains pork or chicken. You’ll find pozole on almost any restaurant menu, so don’t pass up the chance to give it a try! 
  • Tequila: The Guadalajara region is known for its tequila production. In fact, just outside the city, you’ll find a small town called Tequila, which is packed with distilleries. You can take a tequila tour out to this town to sample the wares or simply order tequila in any restaurant or bar throughout the city. Your server will be able to recommend the best brands.
